Eva Deon Bird Carroll, supreme caretaker by nature and God’s design, age 91, passed away peacefully on April 24, 2023. No particular ailment, body just wore out.
She was born January 2, 1932, in Mendon, Utah, 5th little ‘Birdie’ to Afton and Printha Pearl (Hill) Bird.
She married Joseph Leon “Lee” Carroll October 12, 1962, in the Logan Temple.
She served an LDS mission to San Francisco, California in 1954 which was one of the most glorious times of her life.
She retired from US West (Mountain Bell Telephone Company) in 1988 with 34 years of service, volunteered for Salt Lake Regional (St. Mark’s) Hospital for 25 years, and served in Relief Society for over 30 years.
Her heart was bent on serving and loving everyone around her, but none more than her beloved children, grandchildren, and great grandchildren. She knew how to turn ordinary into extraordinary. She left a legacy of love with whoever she encountered.
Deon is survived by her son, Jay Carroll and his girlfriend Jennifer Haycock, Saratoga Springs; her daughter, LeAnn (Dan) Konzem; her granddaughter, Mikkalyn (Stockton) Buchanan and her great granddaughter Reese; her grandsons, Sam and Kevin (Dana) Konzem and her newborn great granddaughter Eloise Enly, all of Sioux Falls, SD; her additional daughters, Connie (Roger) West, Gunnison; and Merrille Carroll, Roosevelt; and many additional grandchildren and great grandchildren. Her family was so so so much bigger than her biological family.
She is also survived by her sister Linda (Travis) Johnson, Preston, ID; five of her brother and sister-in-laws, Elaine (Bill) Brown, Altonah; Laura Meacham, Hamilton, MT; Dean (Caroletta) Carroll and Carol Carroll, all over the place; Joan (Bob) Openshaw, Gunnison; Sherry Coates, Evanston, WY; and many nieces and nephews that she touched, influenced, and loved.
She was preceded in death by her amazing husband, Lee Carroll; her parents who she so admired, Afton and Pearl Bird; and five of her brothers and sisters, Darlene (Harold) Richins; Dale (Bertha) Bird; Renee (Dee) Crocket; Laura Lee Latham; and Carl (Angie) Bird.
Viewing (beginning at 10:00 AM) and funeral service (beginning at Noon) will be held Saturday, May 6 at Goff Mortuary, 8090 S. State Street, Midvale, Utah with interment at the Sandy City Cemetery following the service.
We want to especially thank the ladies (residence and caregivers) of the Aplos House and Reggie from Harmony Hospice Care for loving and caring for us and our special lady. You are all gifts from God directly to our family.
